Ingredients
- 1 lb lean ground beef
- 1 onion (medium , chopped, about ½ cup)
- 1 env chili seasoning mix
- 10 ¾ oz condensed tomato soup
- ½ cup water
- 2 eggs (slightly beaten )
- 1 cup milk
- 6 oz corn chips (crushed, about 3 cups)
- 4 oz Monterey Jack cheese (shredded, about 1 cup)
- ½ cup dairy sour cream
- ½ cup cheddar cheese (shredded)
Instructions
Step 1: Cook the Meat
- In a large skillet, cook lean ground beef and onion over medium heat until the beef is browned.
- Drain excess fat if needed.
Step 2: Prepare the Base
- Stir in chili seasoning mix, tomato soup, and water.
- Simmer for 5 minutes.
Step 3: Mix Wet Ingredients
- In a separate bowl, blend milk and eggs until smooth.
Step 4: Assemble the Casserole
- Stir egg mixture into the meat mixture until combined.
- In a greased casserole dish, layer half the crushed corn chips, half the meat mixture, and half the shredded Monterey Jack cheese.
