Ingredients
  

  • 1 lb lean ground beef
  • 1 onion (medium , chopped, about ½ cup)
  • 1 env chili seasoning mix
  • 10 ¾ oz condensed tomato soup
  • ½ cup water
  • 2 eggs (slightly beaten )
  • 1 cup milk
  • 6 oz corn chips (crushed, about 3 cups)
  • 4 oz Monterey Jack cheese (shredded, about 1 cup)
  • ½ cup dairy sour cream
  • ½ cup cheddar cheese (shredded)

Instructions
 

Step 1: Cook the Meat

  • In a large skillet, cook lean ground beef and onion over medium heat until the beef is browned.
  • Drain excess fat if needed.

Step 2: Prepare the Base

  • Stir in chili seasoning mix, tomato soup, and water.
  • Simmer for 5 minutes.

Step 3: Mix Wet Ingredients

  • In a separate bowl, blend milk and eggs until smooth.

Step 4: Assemble the Casserole

  • Stir egg mixture into the meat mixture until combined.
  • In a greased casserole dish, layer half the crushed corn chips, half the meat mixture, and half the shredded Monterey Jack cheese.
  • Repeat layers and top with remaining cheese.

Step 5: Bake the Casserole

  • Cover if desired and bake uncovered at 400°F for 35 minutes.
  • For chilled casseroles, bake for 45 minutes.

Step 6: Garnish and Serve

  • Spread sour cream over the top of the casserole.
  • Sprinkle with cheddar cheese and return to the oven for 3–5 minutes until cheese melts.
  • Garnish with red and green chili peppers and parsley.
