Ingredients
- 1 lb white marrow beans (dried )
- 2 cups Bermuda onions (chopped)

- 1 lb pork sausage (large )
- 1 lb chuck steak (cut into 1″ cubes)
- 2 tbsp butter
- 2 cups undiluted consommé (or beef broth)
- 4 cups water (or more as needed)
Instructions
Step 1: Soak the Beans
- Place beans in a large bowl, cover with water, and soak overnight.
- Drain and discard the soaking liquid before using.
Step 2: Cook the Beans
- Add the soaked beans to a pot with 4 cups of fresh water.
- Add consommé (or broth) to the pot.
- Bring to a boil, reduce to a simmer, and cook uncovered until tender (about 1½ hours).
Step 3: Prepare the Meat Mixture
- In a skillet, brown the chopped onions in butter until golden.
- Add garlic, thyme, marjoram, salt, and pepper.
- Add pork sausage (sliced or crumbled) and chuck cubes.
