Ingredients
- 8 egg whites
- 1¼ cups powdered sugar (4X or 10X confectioners’)
- 1½ tsp vanilla extract
- 1 lb almonds (blanched and chopped )
- 1 lb hazelnuts (blanched and chopped)
Instructions
Step 1: Whip the Egg Whites
- Beat the egg whites of 8 eggs until stiff peaks form.
Step 2: Sweeten the Mixture
- Gradually add 1¼ cups of powdered sugar to the stiff egg whites, continuing to beat.
Step 3: Reserve Frosting Portion
- Remove 1 teacupful of the mixture and set aside for frosting.
Step 4: Add Flavor and Nuts
- To the remaining mixture, stir in 1½ tsp vanilla extract, 1 lb blanched and chopped almonds, and 1 lb chopped hazelnuts.
Step 5: Form and Bake
- Drop mixture by spoonfuls onto greased pans.
- Top each with a small amount of reserved frosting.
- Bake in a 250°F oven until set and lightly golden (about 25 minutes).
