Ingredients
- 16 oz crushed pineapple (drained, reserve juice)
- 2 oranges (peeled and chopped)
- 1 cup nuts (chopped, e.g., pecans or walnuts)
- 2 cups mini marshmallows
- 8 oz whipped topping ( or whipped cream)
- 2 eggs
- ½ cup granulated sugar
- ¼ tsp salt
- 1 tbsp all-purpose flour
Instructions
Step 1: Make Custard Base
- In a saucepan, whisk together eggs, sugar, salt, flour, and the reserved pineapple juice.
- Cook over medium heat, stirring constantly, until the mixture thickens into a custard.
- Remove from heat and let it cool completely.
Step 2: Prepare Fruit and Nuts
- Chop oranges and nuts if not already done.
- In a large bowl, combine drained pineapple, oranges, nuts, and mini marshmallows.
Step 3: Combine and Fold
- Once the custard is cool, fold it into the fruit mixture.
- Gently fold in the whipped cream until well combined.
Step 4: Chill
- Cover and refrigerate for at least 2–4 hours, or until fully set and chilled.
- Serve cold.
