Pineapple Salad
This Pineapple Salad is a nostalgic chilled dessert or side dish that blends tropical pineapple with citrusy oranges, crunchy nuts, and fluffy marshmallows, all folded into a sweet, creamy base. The salad includes a custard-style mixture cooked on the stovetop and combined with whipped cream for an airy, mousse-like texture. It’s ideal for picnics, potlucks, or holiday gatherings, light, fruity, and with just the right amount of sweetness.

Ingredients

  • 16 oz crushed pineapple (drained, reserve juice)
  • 2 oranges (peeled and chopped)
  • 1 cup nuts (chopped, e.g., pecans or walnuts)
  • 2 cups mini marshmallows
  • 8 oz whipped topping ( or whipped cream)
  • 2 eggs
  • ½ cup granulated sugar
  • ¼ tsp salt
  • 1 tbsp all-purpose flour

Instructions

Step 1: Make Custard Base

  • In a saucepan, whisk together eggs, sugar, salt, flour, and the reserved pineapple juice.
  • Cook over medium heat, stirring constantly, until the mixture thickens into a custard.
  • Remove from heat and let it cool completely.

Step 2: Prepare Fruit and Nuts

  • Chop oranges and nuts if not already done.
  • In a large bowl, combine drained pineapple, oranges, nuts, and mini marshmallows.

Step 3: Combine and Fold

  • Once the custard is cool, fold it into the fruit mixture.
  • Gently fold in the whipped cream until well combined.

Step 4: Chill

  • Cover and refrigerate for at least 2–4 hours, or until fully set and chilled.
  • Serve cold.

Tips

  • Chill thoroughly before serving for best texture
  • Toast the nuts lightly to enhance flavor
  • Substitute crushed pineapple if chunks are unavailable
  • Use sugar-free whipped topping for a lighter version
  • Add shredded coconut for extra texture
  • Reduce sugar slightly if pineapple is very sweet
  • Fold ingredients gently to keep salad fluffy
  • Serve in a glass bowl to highlight layers
  • Makes an excellent make-ahead potluck dish
