Ingredients
  

  • 8 oz mushrooms (sliced)
  • 1 ½ cups + 2 tbsp Miracle Whip (or Miracle Whip Light)
  • 2 cups turkey or chicken (chopped, cooked )
  • 10 oz frozen mixed vegetables, (10 oz frozen mixed vegetables, thawed & drained)
  • ¼ cup onion (chopped )
  • ¼ cup flour
  • 1 ¼ cups milk
  • 1 tsp dried basil leaves
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 ½ cups cheddar cheese (shredded )
  • 2 cups mashed potatoes (hot )

Instructions
 

Step 1: Cook Mushrooms & Onions

  • In a large skillet, cook mushrooms and onions in 2 tbsp Miracle Whip over medium-high heat until softened.

Step 2: Make Sauce Base

  • Add flour, basil, salt, and pepper. Stir well. Gradually add milk, stirring constantly until thickened.

Step 3: Combine Filling

  • Stir in 1 cup shredded cheese, thawed vegetables, turkey (or chicken), and remaining Miracle Whip. Cook for 5 minutes.

Step 4: Assemble Casserole

  • Spoon mixture into a 1 ½ qt casserole dish. Spread mashed potatoes evenly over the top. Sprinkle with remaining cheese.

Step 5: Bake & Serve

  • Bake at 375°F until golden brown and cheese melts. Serve warm.
