Ingredients

  • 2 eggs (large )
  • ½ cup flour
  • 1 tsp baking powder
  • tsp salt
  • 1 tsp vanilla extract
  • 2 apples (large or 3 small, peeled thinly sliced, preferably Delicious variety)
  • ½ cup chopped walnuts

Instructions
 

Step 1: Prepare Apples

  • Peel and thinly slice 2 large or 3 small apples. Set aside.

Step 2: Beat Sugar & Eggs

  • In a large bowl, beat sugar and eggs together until smooth and creamy.

Step 3: Mix Dry Ingredients

  • In a separate bowl, combine flour, baking powder, and salt.

Step 4: Combine Wet & Dry

  • Gradually add the flour mixture to the sugar-egg mixture. Mix until just combined.

Step 5: Add Vanilla

  • Stir in vanilla extract.

Step 6: Fold in Apples & Nuts

  • Gently fold the sliced apples and chopped walnuts into the batter.

Step 7: Prepare Pan

  • Grease and flour a baking pan (8×10 or 13×10; larger pan recommended).

Step 8: Bake

  • Pour the mixture into the prepared pan. Bake at 350°F (175°C) for 45 minutes, until golden and set.

Step 9: Serve

  • Allow to cool slightly. Serve warm or cooled, with or without whipped cream.
