Instructions
Step 1: Prepare the Base
- In a saucepan, melt ⅓ cup butter with 1 tablespoon hot water and 1 cup brown sugar. Remove from heat.
Step 2: Mix Wet Ingredients
- Beat in 1 egg and 1 tsp vanilla extract.
Step 3: Add Dry Ingredients
- Stir in ¼ tsp baking soda, ½ tsp salt, ½ tsp baking powder, and 1 cup flour until just combined.
Step 4: Fold in Zucchini and Mix-ins
- Fold in ¾ cup grated zucchini, ½ cup chocolate chips, and ½ cup chopped nuts if using.
Step 5: Bake
