Ingredients
- 3 lbs confectioners’ sugar
- 1 lb oleo (or margarine, melted)
- 2 cups peanut butter
- 18 oz chocolate chips
- ¼ block paraffin wax (food-grade, optional for firmness)
Instructions
Step 1: Prepare Filling
- Mix confectioners’ sugar and melted oleo together in a large bowl.
- Add peanut butter and mix until thoroughly combined.
Step 2: Shape the Centers
- Roll the mixture into small balls and slightly flatten each one.
- Set aside on waxed paper. (Makes approx. 200 pieces.)
Step 3: Melt Chocolate Coating
- In a double boiler, melt chocolate chips and paraffin wax until smooth and fully blended.
Step 4: Coat the Centers
- Dip each peanut butter ball into the melted chocolate mixture.
- Place coated candies on waxed paper.
Step 5: Chill
- Cool the candies in the refrigerator until firm.
Tips
- Use silicone candy molds to shape instead of hand-rolling.
- Swap paraffin wax for 1 to 2 tablespoons of coconut oil for a smoother coating.
- Add a pinch of salt for a more modern “salted peanut butter cup” flavor.
- Stir in crushed pretzels for texture.
- Use dark chocolate chips for a less sweet finish.
- Add 1 teaspoon vanilla extract to the peanut butter mixture.
- Make “mini cups” by pressing mixture into mini muffin liners before coating.
- Decorate tops with a drizzle of contrasting chocolate.
- Freeze balls for 10 minutes before dipping to make the process cleaner.
