This vintage Neapolitan Cheesecake recipe is a charming throwback to the dessert tables of mid-century American kitchens. Combining the classic flavors of chocolate, vanilla, and cherry in a layered format, this cheesecake is both visually delightful and richly satisfying. With a cookie-like crust, creamy filling, and a chocolate top, it's perfect for special occasions or nostalgic gatherings. The recipe showcases a creative use of unflavored gelatin and whipped egg whites for a mousse-like texture, resulting in a light yet indulgent dessert.

Tips
- Use a food processor to blend the crust ingredients quickly and evenly.
- Toast nuts lightly before adding to the crust for better flavor (if nuts are present—handwriting suggests “minced nuts”).
- Add a few drops of almond extract to the vanilla layer for extra depth.
- Replace semi-sweet chocolate with dark chocolate for a richer bottom layer.
- Chill overnight instead of 2 hours for cleaner slicing.
- Add a thin strawberry layer or swirl to emphasize the “Neapolitan” theme.
- Use stabilized whipped cream for topping if serving at an event.
- Make in a springform pan for easier removal.
- Add food coloring to the vanilla layer if you want distinct pink/white/brown layers.
