Ingredients
  

Crust:

  • 1 cup all-purpose flour
  • ½ cup pink candy dinner mints (crushed)
  • 1 tsp vanilla extract
  • ½ cup butter (cut into cubes)

Chocolate-Vanilla Filling Base:

  • 16 oz semi-sweet chocolate morsels
  • cup sugar
  • ¼ tsp salt
  • 1 env unflavored gelatin
  • 2 egg yolks
  • ¾ cup milk
  • 8 oz cream cheese (1 cup, softened)
  • 1 tsp vanilla extract
  • 2 egg whites
  • ¼ cup sugar
  • ½ cup whipping cream

Instructions
 

Step 1: Prepare the Crust

  • Combine flour, crushed mintss, and vanilla.
  • Cut in butter until mixture resembles coarse crumbs.
  • Press into the bottom of an 8×8-inch or 9×9-inch pan.
  • Bake at 400°F for 12 to 15 minutes. Let cool.

Step 2: Melt Chocolate

  • Melt chocolate morsels over hot water (double boiler). Let cool.

Step 3: Prepare Gelatin Base

  • Combine 1/3 cup sugar, salt, and gelatin in a saucepan.
  • Add milk and slightly beaten egg yolks.
  • Cook over medium heat, stirring constantly, until mixture thickens slightly. Cool.

Step 4: Blend Cream Cheese

  • Beat cream cheese until smooth. Gradually blend in gelatin mixture and vanilla.

Step 5: Beat Egg Whites & Cream

  • Beat egg whites until stiff peaks form. Fold gently into the cream cheese mixture.
  • Gradually add 1/4 cup sugar.
  • Whip cream until soft peaks form. Fold into cream cheese mixture. Divide filling in half.

Step 6: Assemble Layers

  • Fold melted chocolate into one half of the filling.
  • Spread chocolate layer over cooled crust.
  • Top with vanilla layer. Chill at least 2 hours before serving.

Tips

  • Use a food processor to blend the crust ingredients quickly and evenly.
  • Toast nuts lightly before adding to the crust for better flavor (if nuts are present—handwriting suggests “minced nuts”).
  • Add a few drops of almond extract to the vanilla layer for extra depth.
  • Replace semi-sweet chocolate with dark chocolate for a richer bottom layer.
