Ingredients
- 6 oz dried noodles
- ¾ lbs chicken breasts
- 1 ½ cup mushrooms (sliced & fresh )
- 4 green onions (sliced)
- ½ red sweet pepper (chopped)
- ¼ cup chicken broth
- 2 cloves garlic (minced)
- 10 oz frozen chopped broccoli (thawed)
- 1 can cream of broccoli soup (or cream of chicken soup)
- 8 oz sour cream
- 1 tsp dry mustard
- ¼ tsp black pepper
- 1 cup fine dry bread crumbs
- 1 tbsp butter (melted)
Instructions
Step 1: Prepare the Noodles
- Cook noodles according to package directions until al dente.
- Rinse under cold water and drain well.
Step 2: Cook the Chicken
- In a skillet, cook chicken pieces until lightly browned.
- Transfer to a large mixing bowl.
Step 3: Sauté Vegetables
- In a skillet, add mushrooms, red pepper, chicken broth, and garlic.
- Bring to a boil, reduce heat, and simmer covered for about 5 minutes until veggies are tender.
Step 4: Combine Sauce
- Add cream of chicken soup, sour cream, mustard, and pepper to the skillet mixture.
- Stir gently until smooth and creamy.
Step 5: Assemble the Casserole
- Add broccoli and noodles to the chicken mixture.
- Stir gently to combine, coating evenly with the creamy sauce.
- Spoon into a 13×9-inch prepared baking dish.
Step 6: Top and Bake
- In a small bowl, mix bread crumbs with melted butter.
- Sprinkle evenly over noodles.
