Ingredients
  

  • 21 oz cream of chicken soup (2 cans)
  • 1 cup mayonnaise
  • 2 to 3 tsp lemon juice
  • ½ tsp curry powder
  • 3 to 4 tbsp chicken broth
  • 5 to 6 cups cooked chicken (chopped)
  • 2 lbs frozen broccoli (chopped)

Instructions
 

Step 1: Prepare the Chicken

  • Simmer whole chicken in water with 2 slices lemon, ½ onion, light salt, and 1–2 bay leaves.
  • Cook until tender.
  • Let cool in stock, then cut or tear into bite-sized pieces.

Step 2: Preheat Oven

  • Preheat oven to 350°F (175°C).
  • Lightly grease a flat casserole dish.

Step 3: Mix Sauce

  • In a large bowl, combine cream of chicken soup, mayonnaise, lemon juice, curry powder, and chicken broth.
  • Mix until smooth.

Step 4: Assemble Casserole

  • Spread chopped cooked chicken evenly in the greased casserole dish.
  • Pour soup mixture over the chicken.
  • Top with chopped broccoli.
