Ingredients
  

  • 6 oz dried noodles
  • ¾ lbs chicken breasts
  • 1 ½ cup mushrooms (sliced & fresh )
  • 4 green onions (sliced)
  • ½ red sweet pepper (chopped)
  • ¼ cup chicken broth
  • 2 cloves garlic (minced)
  • 10 oz frozen chopped broccoli (thawed)
  • 1 can cream of broccoli soup (or cream of chicken soup)
  • 8 oz sour cream
  • 1 tsp dry mustard
  • ¼ tsp black pepper
  • 1 cup fine dry bread crumbs
  • 1 tbsp butter (melted)

Instructions
 

Step 1: Prepare the Noodles

  • Cook noodles according to package directions until al dente.
  • Rinse under cold water and drain well.

Step 2: Cook the Chicken

  • In a skillet, cook chicken pieces until lightly browned.
  • Transfer to a large mixing bowl.

Step 3: Sauté Vegetables

  • In a skillet, add mushrooms, red pepper, chicken broth, and garlic.
  • Bring to a boil, reduce heat, and simmer covered for about 5 minutes until veggies are tender.

Step 4: Combine Sauce

  • Add cream of chicken soup, sour cream, mustard, and pepper to the skillet mixture.
  • Stir gently until smooth and creamy.

Step 5: Assemble the Casserole

  • Add broccoli and noodles to the chicken mixture.
  • Stir gently to combine, coating evenly with the creamy sauce.
  • Spoon into a 13x9-inch prepared baking dish.

Step 6: Top and Bake

  • In a small bowl, mix bread crumbs with melted butter.
  • Sprinkle evenly over noodles.
  • Cover with foil and bake at 350°F for 30 minutes.
  • Remove foil and bake an additional 10–15 minutes until bubbly and golden brown.
