Ingredients
  

  • 2 cups nopales (cactus paddles, cleaned and diced)
  • 1 lb pork stew meat (cubed)
  • 2 tbsp chili powder
  • 1 cup tomato sauce
  • 1 tsp salt (or to taste)
  • 8 flour tortillas
  • 2 cups refried beans (for serving)

Instructions
 

Step 1: Prepare the Cactus

  • Rinse cactus paddles thoroughly and remove any thorns if necessary.
  • Dice into bite-sized strips or cubes.

Step 2: Boil the Cactus and Pork

  • In a large pot, boil the nopales and pork stew meat together until both are tender, about 20–25 minutes.
  • Drain and set aside.

Step 3: Make the Sauce

  • In a skillet, mix the boiled pork and cactus with chili powder and tomato sauce.
  • Stir well and simmer for 10 minutes until flavors meld.
  • Add salt to taste.

Step 4: Assemble the Dish

  • Warm the flour tortillas.
  • Spoon the cactus and pork mixture into tortillas and fold.

Step 5: Serve

  • Serve hot with refried beans on the side.
