  • 15 oz kidney beans, (drained)
  • 15 oz cannellini beans (drained)
  • 15 oz pinto beans (drained)
  • 10 10 inch tortillas (spinach or roasted red pepper)
  • 1 cup romaine lettuce (shredded )
  • 1 pint cherry tomatoes (cut in quarters)
  • 1 cup cheddar cheese (shredded )

Instructions
 

Step 1: Sauté Aromatics

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion and sweet green pepper.
  • Sauté for about 5 minutes until softened.

Step 2: Season the Mixture

  • Add chili powder, salt, cumin, and garlic powder.
  • Cook for 1 more minute, stirring frequently.

Step 3: Add Sauce and Beans

  • Stir in tomato sauce.
  • Add kidney, cannellini, and pinto beans.
  • Simmer on low heat for 5–10 minutes until heated through.

Step 4: Assemble the Tacos

  • Warm tortillas.
