  • 1 tsp orange peel (finely shredded )
  • ¼ cup orange juice

Instructions
 

Step 1: Boil Sweet Potatoes

  • In a 4½-quart Dutch oven, cook sweet potatoes (covered) in enough boiling salted water to cover for 30 to 40 minutes or until tender.
  • Drain, peel, and quarter potatoes.

Step 2: Mash and Mix

  • Return potatoes to the Dutch oven.
  • Add egg, orange peel, orange juice, and butter or margarine.
  • Mash the potato mixture until smooth.
  • Stir in salt and nutmeg.

Step 3: Heat and Pipe

  • Heat the mixture until hot throughout.
  • Spoon the hot mixture, half at a time, into a pastry bag fitted with a star tip.
  • Pipe mixture onto a turkey platter or spoon into a serving dish.
