Oriental Coleslaw

Oriental Coleslaw
Oriental Cole Slaw became a favorite at potlucks and family gatherings throughout the 1970s and 1980s when ramen noodles began appearing in creative American salads. This crunchy cabbage salad combines crisp shredded cabbage, green onions, toasted ramen noodles, sesame seeds, and almonds with a tangy homemade vinaigrette seasoned with the noodle packet. The result is a refreshing balance of sweet, savory, and nutty flavors with plenty of texture in every bite. Unlike traditional creamy coleslaw, this version is light, crisp, and perfect for warm-weather meals, picnics, barbecues, or holiday buffets. It's especially loved because the crunchy toppings are added just before serving, keeping every bite fresh and crisp.

Step 3: Prepare the Noodles

  • Break the uncooked ramen noodles into small bite-sized pieces.
  • Do not cook the noodles.

Step 4: Make the Dressing

Step 6: Finish Before Serving

Tips

  • Add shredded carrots for extra color and sweetness.
  • Substitute Napa cabbage for a softer texture.
  • Use sunflower seeds instead of almonds for a nut-free version.
  • Add grilled chicken to turn it into a main dish.
  • Mix the dressing several hours ahead for deeper flavor.
  • Add the noodles just before serving to maintain crunch.
  • Try rice vinegar for a milder dressing.
  • Sprinkle with extra sesame seeds for garnish.
  • Add mandarin oranges for a sweet variation.
  • Refrigerate the dressed cabbage separately if preparing ahead.
