Ingredients
- 2 egg whites (unbeaten)
- 1¼ cups granulated sugar
- ¼ cup brown sugar (firmly packed)
- 5 tbsp cold water
- 1 oz unsweetened chocolate (melted)
Instructions
Step 1: Combine Ingredients
- Place egg whites, granulated sugar, brown sugar, and cold water in the top part of a double boiler.
Step 2: Mix Thoroughly
- Beat the mixture with a rotary egg beater or hand mixer until thoroughly blended.
Step 3: Cook Over Double Boiler
- Place the top pan over rapidly boiling water.
Step 4: Beat and Cook
- Continue beating constantly with an egg beater. Cook for 7 minutes or until the frosting stands in peaks.
Step 5: Finish with Chocolate
- Remove from heat. Fold in the melted chocolate carefully.
Step 6: Use Immediately
- Spread promptly on cooled cake or cupcakes before it sets.
