  • 1 cup cranberries (coarsely chopped )
  • 1 cup seedless raisins
  • ½ cup walnuts (coarsely chopped )
  • 1 tbsp baking powder
  • 2 tbsp orange rind (grated, zest)
  • ¼ tsp salt
  • 2 eggs (large )
  • ¾ cup fresh orange juice
  • ½ cup Hellmann’s mayonnaise

Instructions
 

Step 1: Prepare Pan

  • Grease and flour a 9-inch loaf pan and set aside.

Step 2: Combine Dry Ingredients

  • In a large bowl, combine flour, sugar, chopped cranberries, raisins, walnuts, baking powder, orange zest, and salt.

Step 3: Mix Wet Ingredients

  • In a separate bowl, beat the eggs, orange juice, and mayonnaise until smooth.

Step 4: Combine and Mix

  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.

Step 5: Bake the Loaf
