Instructions
Step 1: Prepare Ingredients
- Peel and thinly slice onions. Rinse lentils and brown rice under cold water. Chop cilantro.
Step 2: Sauté Onions
- In a large skillet or saucepan, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until deeply golden and caramelized (about 20 minutes).
Step 3: Cook Lentils and Rice
- In a medium pot, combine lentils, rice, and water or broth. Bring to a boil, then reduce heat to low. Cover and simmer for 30–35 minutes, or until both the lentils and rice are tender and water is absorbed.
