Ingredients

  • 2 cups flour
  • 4 tsp baking powder
  • ½ tsp salt
  • 1 tbsp sugar
  • ½ cup shortening
  • 1 egg (beaten)
  • cup milk
  • 3 cups strawberries (sliced)
  • 1 cup crushed pineapple ( or sliced banana)
  • 1 cup sugar (for fruit)
  • whipped cream (for decoration)

Instructions

Step 1: Prepare the Dough

  • In a mixing bowl, sift together flour, baking powder, salt, and sugar.
  • Cut in shortening until mixture resembles coarse crumbs.
  • Add beaten egg and milk. Mix until soft dough is formed.

Step 2: Bake the Shortcake

  • Preheat oven to 450°F (232°C).
  • Divide dough into 2 equal parts and shape into layers.
  • Place on a baking sheet and bake for 10–15 minutes, or until golden brown.

Step 3: Prepare the Fruit

  • Mix sliced strawberries and crushed pineapple or banana with ½ cup sugar.
  • Let sit while shortcake cools to allow juices to develop.

Step 4: Assemble the Shortcake

  • Place one cake layer on serving plate.
  • Spoon half of the fruit mixture over it.
  • Add second layer and top with remaining fruit.
  • Decorate with whipped cream.

Tips

  • Use very cold shortening to ensure a tender, flaky shortcake texture
  • Substitute butter for shortening for a richer flavor
  • Macerate strawberries with sugar for 30 minutes for extra juice
  • Try peaches or raspberries in place of pineapple
  • Add a splash of vanilla to the whipped cream
  • Bake the shortcake in a round cake pan instead of layers if preferred
  • Serve slightly warm for a classic presentation
  • Reduce sugar slightly if fruit is very sweet
  • Add lemon zest to the dough for brightness
