Don’t Peek Stew is an old-fashioned American oven stew built around an unusually simple cooking method: combine the ingredients, cover the dish, place it in a low oven, and resist the temptation to look inside. This handwritten version uses lean ground beef with celery, onion, carrots, Snap-E-Tom tomato beverage, and tapioca, which thickens the cooking liquid as the stew slowly bakes. The card’s emphatic “DO-NOT-PEEK!” captures both the recipe’s name and its charm. Five hours at just 250°F allows the vegetables to soften and the beef and tomato flavors to meld into a rich, hearty meal with very little hands-on work. It is a wonderfully practical example of vintage comfort cooking.
Ingredients
- 2 lbs lean ground beef
- 1 cup celery (chopped)
- 1 onion (chopped)
- 1 cup carrots (chopped)
- 2 cans Snap-E-Tom
- 2 tbsp tapioca
- salt (to taste)
- black pepper (to taste)
Instructions
Step 1: Prepare the Beef and Vegetables
- Place the lean ground beef, chopped celery, chopped onion, and chopped carrots in a large covered baking dish or Dutch oven.
- Mix the first four ingredients together.
Step 2: Prepare the Tomato Mixture
- Combine the Snap-E-Tom, tapioca, salt, and pepper.
Step 3: Assemble the Stew
- Pour the Snap-E-Tom mixture over the beef and vegetables.
Step 4: Cover the Stew
- Cover the baking dish securely with a lid.
Step 5: Bake Without Peeking
- Bake at 250°F for 5 hours.
- DO NOT PEEK during the cooking time.
Step 6: Stir and Serve
- After 5 hours, remove the dish from the oven.
- Carefully uncover, stir the stew well, and serve hot.
Tips
- Keep the baking dish covered for the full five hours—the no-peeking method helps retain heat and moisture.
- Use a heavy Dutch oven or tightly covered casserole dish for the most even slow cooking.
- If Snap-E-Tom is unavailable, a seasoned tomato-vegetable juice can be used as a modern substitute, though the flavor will differ from the original.
- Cut the carrots, celery, and onion into similar-sized pieces so they cook evenly.
- Add diced potatoes for an even heartier version of the stew.
- For extra savory flavor, add a small splash of Worcestershire sauce.
- Tapioca is the recipe’s thickener, so don’t omit it unless replacing it with another suitable thickener.
- The stew can be prepared in the baking dish ahead of time and refrigerated until you’re ready to bake it.
- Serve with crusty bread or warm dinner rolls to soak up the tomato-rich sauce.
