  • 1 tbsp chopped onion
  • 2 lbs leftover lamb roast (diced)
  • 1 cup boiling water
  • tsp curry powder
  • ¼ cup celery (chopped )
  • 2 tbsp parsley (chopped )
  • 1 tbsp pimientos (chopped )
  • salt (to taste)
  • black pepper (to taste)
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • cooked rice (for serving)

Mint Chutney:

  • ¼ cup fresh mint leaves (finely chopped)
  • 2 tbsp vinegar
  • 1 tbsp sugar

Instructions
 

Step 1: Sauté Base

  • Heat lamb fat or butter in a pan.
  • Add chopped onion and cook until softened.

Step 2: Brown Lamb

  • Add diced cooked lamb.
  • Stir and lightly brown with the onions.

Step 3: Build Sauce

  • Pour in boiling water.
  • Stir in curry powder, celery, parsley, and pimientos.

Step 4: Simmer

  • Cover and simmer gently for about 30 minutes.
  • Season with salt and pepper.
