Instructions
 

Step 1: Prepare Pan & Preheat Oven

  • Grease and flour a 12-cup fluted tube (Bundt) pan.
  • Preheat oven to 350°F (175°C).

Step 2: Beat Wet Base

  • In a large bowl, combine sugar, eggs, brandy or sherry extract, and vanilla.
  • Beat at high speed with a mixer for 3 minutes until light and thickened.

Step 3: Add Mayonnaise

  • At low speed, blend in mayonnaise until the mixture is smooth.

Step 4: Combine Dry Ingredients

  • In a separate bowl, sift together flour, cocoa, baking soda, and baking powder.
  • Gradually add the dry mixture to the wet mixture, beating just until combined and smooth.

Step 5: Add Fruit

  • Stir in cherry pie filling and raisins by hand until evenly distributed.

Step 6: Bake & Cool

  • Pour batter into the prepared pan.
