  • 4 lb boneless chuck roast
  • 1 tsp salt
  • ½ tsp black pepper
  • 6 onions (medium, sliced)
  • 1 ½ cup beef broth
  • ¾ cup beer
  • 2 tbsp brown sugar (packed )
  • 3 tbsp Dijon mustard
  • 2 tbsp cider vinegar

Instructions
 

Step 1: Brown the Beef

  • Trim excess fat from the chuck roast.
  • Heat the olive oil in a 10-inch skillet over medium-high heat.
  • Cook the meat in the hot oil for about 10 minutes, turning occasionally, until browned on all sides.
  • Sprinkle the roast with the salt and pepper.

Step 2: Assemble the Crock-Pot

  • Place the sliced onions in the bottom of a 3 ½ – to 6-quart Crock-Pot.
  • Place the browned beef on top of the onions.

Step 3: Add the Sauce and Slow Cook

  • Mix the beef broth, beer, brown sugar, Dijon mustard, and cider vinegar.
  • Pour the mixture over the beef and onions.
  • Cover and cook on LOW for 8 to 10 hours, or until the beef is tender.

Step 4: Serve

  • Remove the beef and onions from the Crock-Pot with a slotted spoon.
  • Cut the beef into slices.
  • Skim excess fat from the cooking juices, if desired.
  • Serve the beef and onions with the cooking juices.

  • Slice the onions fairly evenly so they soften at approximately the same rate.

  • A lager, amber ale, or other moderately flavored beer works well without overpowering the beef.
