Creamy Brocato’s Tangy Garlic Salad Dressing

Brocato's Salad Dressing
Brocato’s Salad Dressing is a classic, creamy condiment inspired by the famous Brocato’s delicatessen-style flavors. With its tangy blend of mayonnaise, ketchup, Worcestershire sauce, mustard, and fresh garlic, this dressing combines savory, smoky, and slightly spicy notes. A dash of Tabasco adds a subtle kick, while paprika, lemon juice, and onion juice balance out the richness. Perfect for topping fresh greens, using as a dip, or drizzling over sandwiches, this versatile recipe has timeless appeal and a nostalgic, old-fashioned charm.

  • ¼ cup ketchup (or chili sauce)
  • 1 tbsp mustard
  • 1 tabsp Worcestershire sauce
  • 2 cloves garlic (minced)
  • 2 tbsp onion juice (juice of 1 onion)
  • 2 tbsp water
  • 1 dash Tabasco sauce
  • 1 tsp paprika
  • 1 tsp lemon juice
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

Step 1: Prepare Ingredients

  • Mince the garlic and juice the onion. Set aside.

Step 2: Combine Base

  • In a mixing bowl, whisk together the mayonnaise, ketchup (or chili sauce), mustard, and Worcestershire sauce until smooth.

Step 3: Add Seasonings

  • Stir in garlic, onion juice, water, Tabasco sauce, paprika, lemon juice, salt, and black pepper.

Step 4: Blend & Chill

  • Whisk until fully combined and smooth.

Tips

  • Use chili sauce instead of ketchup for a sweeter, more old-fashioned flavor as noted on the card.
  • For a thinner consistency, add an extra tablespoon or two of water or lemon juice.
  • Substitute part of the mayonnaise with sour cream or yogurt for a lighter texture.
  • Use fresh-squeezed lemon juice for brighter flavor.
  • Let the dressing chill overnight to mellow raw onion and garlic flavors.
  • Blend in a food processor for an especially smooth texture.
  • Add extra Tabasco or paprika for more heat and color.
  • Try smoked paprika to add depth and light smokiness.
  • Use as a spread on sandwiches or burgers, not just as salad dressing.
  • Strain the onion juice if you prefer no texture from pulp.
