Pomander candy balls are a nostalgic no-bake treat featuring chocolate, crushed vanilla wafers, orange extract, and a boozy kick of rum. Named after the fragrant spice-studded balls traditionally used to scent the air, these edible versions deliver an aromatic and chewy blend of chocolate and citrus with a subtle crunch. Their richness deepens over time, making them a great make-ahead option for holidays and festive gatherings. These confections are rolled in sugar and meant to "ripen" for several days to fully develop their flavor—much like traditional rum balls.
Ingredients
- 6 oz chocolate morsels
- ½ cup granulated sugar
- ¼ cup light corn syrup
- ¼ cup water
- 2½ cups finely crushed vanilla wafers (finely crushed, about 5 dozen wafers)
- 1 cup nuts (finely chopped, e.g., walnuts or pecans)
- 1 tsp orange extract
- 2-3 tbsp rum
- sugar (for rolling)
Instructions
Step 1: Melt the Chocolate
- In a saucepan over low heat, melt the chocolate morsels until smooth.
Step 2: Add Sweeteners
- Remove from heat. Stir in the sugar and corn syrup until fully combined.
Step 3: Prepare the Base
- In a separate bowl, combine the crushed vanilla wafers and chopped nuts.
Step 4: Add Liquids
- Mix the water and orange extract into the chocolate mixture. Then pour it over the wafer-nut mixture.
Step 5: Combine and Flavor
- Mix thoroughly. Add rum to taste, stirring until evenly blended.
Step 6: Form Balls
- Shape mixture into 1-inch balls. Roll each ball in granulated sugar.
Step 7: Ripen and Store
- Place in an airtight container. Let ripen for at least several days.
- Makes about 4½ dozen. Keep refrigerated. Lasts 3–4 weeks.
Tips
- Substitute dark chocolate chips for a deeper cocoa flavor.
- Add ½ tsp cinnamon or ground cloves for extra warmth.
- Use bourbon or brandy instead of rum for a different flavor profile.
- Coat in powdered sugar or cocoa powder instead of granulated sugar.
- For nut-free version, replace nuts with finely shredded coconut or crisp rice cereal.
- Make them kid-friendly by omitting the alcohol and adding orange juice instead.
