Ingredients
  

  • 6 potatoes (about 2½ lbs, peeled and cut into ¾” cubes)
  • 3 tbsp butter ( or margarine)
  • cup onion (sliced )
  • 3 tbsp all-purpose flour
  • 1 cup milk
  • ½ cup heavy cream
  • 2 tsp Dijon-style mustard
  • ¼ tsp salt
  • tsp pepper
  • 1 dash nutmeg
  • 1 cup Gruyère cheese (shredded, divided)

Instructions
 

Step 1: Prepare Potatoes

  • Grease a 1½-quart shallow baking dish and set aside.
  • Cook cubed potatoes in boiling salted water for 7–10 minutes until just tender. Drain well.

Step 2: Make Cheese Sauce

  • Preheat oven to 350°F.
  • In a medium saucepan over medium heat, melt butter.
  • Add onions and cook for 4 minutes, stirring until softened.
  • Add flour and cook for 1 minute, stirring constantly.
  • Gradually whisk in milk and cream.
  • Add mustard, salt, pepper, and nutmeg.
  • Cook while stirring constantly until sauce is thickened.

Step 3: Combine and Bake

  • Remove sauce from heat.
  • Stir in ⅔ cup of the shredded cheese until melted.
  • Add cooked potatoes to the sauce and toss to coat.
  • Spoon mixture into the prepared baking dish.
  • Sprinkle with the remaining ⅓ cup of cheese.

Step 4: Bake and Broil

  • Bake for 20 minutes.
