Ingredients
- 30 oz frozen mixed vegetables
- 8 oz Cheese Whiz (1 jar)
- 20 ½ cream of celery soup (1 can)
- 6 oz French-fried onions (1 can)
- Water (for boiling vegetables)
Instructions
Step 1: Cook Vegetables
- Boil or steam the frozen vegetables according to package directions.
- Drain well and set aside.
Step 2: Prepare Cheese Sauce
- In a saucepan, combine the Cheese Whiz and cream of celery soup.
- Heat over medium-low heat until smooth and well blended.
Step 3: Assemble Casserole
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked vegetables with the cheese-soup mixture.
- Pour the mixture into a greased 9×13-inch casserole dish.
Step 4: Bake
- Cover and bake for about 25 minutes.
- Remove from oven, sprinkle fried onions evenly on top, and return to oven uncovered.
Step 5: Finish & Serve
- Bake an additional 10 minutes until the topping is golden brown.
- Serve warm.
Tips
- Use any frozen mixed vegetable blend you like (California blend, mixed peas/carrots/corn, etc.).
- If vegetables release extra liquid after cooking, drain well to avoid a watery casserole.
- Substitute cream of mushroom or cream of broccoli soup for a different flavor.
- Add cooked rice or small pasta to make it heartier.
- For extra crunch, mix additional onion rings into the casserole as well as on top.
- Top with buttered breadcrumbs instead of onion rings if preferred.
- Add shredded cheddar to boost cheesiness.
