Ingredients
- 1 cup heavy cream
- 2 to 4 tbsp confectioners’ sugar
- 1 to 2 tsp Cognac (or rum, or Kirsch)
- ½ cup strawberries (or raspberries, drained & mashed)
- ½ cup raspberries (whole, or strawberries)
Instructions
Step 1: Whip the Cream
- Whip the heavy cream until it holds a firm peak.
Step 2: Add Sugar and Liqueur
- Gradually mix in the confectioners’ sugar (to taste) and the liqueur of your choice.
Step 3: Incorporate Berries
- Add ½ cup of drained, mashed berries to the whipped cream mixture. Mix thoroughly.
Step 4: Assemble Cake
- Spread the Chantilly cream filling between 3 cake layers. Cover the sides and top with the remaining cream filling.
Step 5: Garnish
- Arrange the whole berries on top decoratively.

- Substitute vanilla extract if avoiding alcohol.
- Chill mixing bowl and beaters for fluffier whipped cream.
- Use blueberries, blackberries, or a mix of berries for variation.
