Ingredients
  

  • 4 cups peaches (peeled, finely chopped)
  • 1 tbsp lemon juice
  • 1 pkg powdered fruit pectin
  • ⅓ – ½ cups sugar
  • 1 tsp almond extract

Instructions
 

Step 1: Combine Fruit & Lemon

  • In a large pot, stir together chopped peaches and lemon juice.
  • Bring the mixture to a boil over high heat.

Step 2: Initial Cooking

  • Reduce the heat.
  • Stir and cook rapidly for about 15 minutes, stirring often.

Step 3: Add Pectin and Sugar

  • Stir in powdered fruit pectin and sugar into the fruit mixture.

Step 4: Final Boil

  • Stir constantly and cook for another 15 minutes or until the jam thickens.
  • Add almond extract and remove from heat.

Step 5: Store

  • Pour jam into sterilized jars or containers.
  • Cover, cool, and refrigerate.
  • Makes approximately 3 cups.
