- 2 cups Rice Chex (crushed )

Instructions
Step 1: Mix & Prepare Crust
- In a bowl, mix the crushed Rice Chex, brown sugar, melted butter, coconut, and chopped pecans.
Step 2: Layer Base
- Press 2/3 of the mixture into the bottom of a 9×13-inch pan to form a crust.
Step 3: Add Ice Cream
- Spread softened peppermint ice cream evenly over the crust.
Step 4: Top & Freeze
- Sprinkle the remaining Chex mixture on top of the ice cream.
- Freeze until firm, at least 4 hours or overnight.
