Ingredients
  

  • 2 cups Rice Chex (crushed )
  • ½ cup brown sugar
  • cup butter (melted)
  • 1 cup coconut (shredded )
  • ½ cup pecans (chopped )
  • ½ gallon peppermint ice cream (softened)

Instructions
 

Step 1: Mix & Prepare Crust

  • In a bowl, mix the crushed Rice Chex, brown sugar, melted butter, coconut, and chopped pecans.

Step 2: Layer Base

  • Press 2/3 of the mixture into the bottom of a 9x13-inch pan to form a crust.

Step 3: Add Ice Cream

  • Spread softened peppermint ice cream evenly over the crust.

Step 4: Top & Freeze

  • Sprinkle the remaining Chex mixture on top of the ice cream.
  • Freeze until firm, at least 4 hours or overnight.

Tips
