- 1 cup pineapple chunks (or peach or pear chunks)
- 11 oz mandarin oranges (1 can, drained)
- 1 cup strawberries (halved, or blueberries)
- ½ cup raspberries
Instructions
Step 1: Make the Syrup
- Combine the orange juice, water, honey, rum, chopped mint, and cinnamon in a large saucepan.
Step 2: Simmer
- Bring the mixture to a gentle simmer.
- Cook for about 10 minutes.
Step 3: Cook Firm Fruit
- Add the melon chunks.
- Add the pineapple chunks.
- Add the peach or pear chunks.
- Simmer for 5 minutes.
Step 4: Finish the Compote
- Remove the saucepan from the heat.
- Gently stir in the mandarin oranges.
- Fold in the strawberries (or blueberries).
- Fold in the raspberries.
Step 5: Chill and Serve
- Transfer the compote to a serving bowl.
- Refrigerate until thoroughly chilled before serving.
