Ingredients

  • 1 egg
  • 1 cup sugar
  • ½ cup sour milk (or buttermilk)
  • ½ cup butter (softened)
  • 1 tsp baking soda
  • 1 ½ cups all-purpose flour
  • 3 tbsp cocoa powder
  • 1 tsp vanilla extract

Instructions

Step 1: Cream Butter & Sugar

  • In a mixing bowl, cream together the butter and sugar until light and fluffy.

Step 2: Add Egg

  • Beat in the egg until fully incorporated.

Step 3: Mix Cocoa & Sour Milk

  • In a small bowl, dissolve the baking soda and cocoa powder into the sour milk.

Step 4: Combine Wet & Dry Ingredients

  • Add the cocoa mixture to the creamed butter and sugar.
  • Gradually work in the flour, mixing slowly until smooth.

Step 5: Add Vanilla

  • Stir in the vanilla extract.

Step 6: Bake

  • Pour batter into a well-greased shallow pan.
  • Bake in a slow oven (approx. 325°F / 165°C) for 35–40 minutes, or until a toothpick inserted comes out clean.

Tips

  • A “slow oven” traditionally means about 300 to 325°F; start checking for doneness at 30 minutes.
  • If you don’t have sour milk, add 1 tablespoon vinegar or lemon juice to milk and let stand 5 minutes.
  • Add 1 to 2 teaspoons instant coffee or espresso powder to enhance the mocha flavor.
  • Frost with chocolate or coffee-flavored buttercream for a true mocha finish.
  • Bake in an 8×8-inch or 9×9-inch shallow pan for best results, as indicated on the card.
  • Line the pan with parchment for easier removal and cleaner slices.
  • Do not overmix after adding flour, mix just until incorporated for a tender crumb.
  • Add chopped walnuts or pecans for texture if desired.
  • Dust with powdered sugar if you prefer to skip frosting.
