Ingredients
  

  • 1 cup carrot (grated)
  • 1 cup sweet potato (grated)
  • 2 cups russet potato (grated)
  • ¼ cup onion (finely chopped or grated)
  • 1 egg (beaten)
  • ½ tsp garlic salt
  • ¼ tsp black pepper
  • 2 tbsp canola oil (plus more for frying)

Instructions
 

Step 1: Prepare the Vegetables

  • Grate the carrot, sweet potato, and russet potato. Finely chop or grate the onion.
  • Squeeze excess moisture from all grated vegetables using a clean towel.

Step 2: Mix Ingredients

  • In a bowl, combine all vegetables with the beaten egg, garlic salt, and pepper.
  • Mix thoroughly and let sit for 10–15 minutes to allow flavors to meld.

Step 3: Heat Oil

  • Add canola oil to a skillet and heat over medium heat.
  • Test by dropping a small bit of the mixture into the oil—it should sizzle.

Step 4: Fry the Latkes

  • Drop spoonfuls of mixture into the hot oil and flatten slightly.
  • Fry for about 5 minutes on each side or until golden and crisp.

Step 5: Serve

  • Drain on paper towels. Serve warm with applesauce or sour cream.

Tips

  • Substitute sweet potato with butternut squash for a twist.
  • Add fresh chopped parsley or chives for extra color.
  • Use a non-stick skillet for easier flipping.
