Skewer Steak
This vibrant and hearty skewer steak recipe brings together tender chunks of sirloin, sweet cherry tomatoes, pineapple, mushrooms, and green peppers, all grilled to smoky perfection. The marinade, a tangy-sweet blend of tomato juice, mustard, vinegar, molasses, and spices, not only infuses the steak with bold flavor but also tenderizes it. Ideal for backyard cookouts or a casual dinner with friends, this dish captures the lively spirit of mid-century grilling culture with a touch of tropical flair.

Ingredients

  • lbs sirloin steak (cut into 2-inch cubes)
  • 2 cups tomato juice
  • ½ cup vinegar
  • ¼ cup prepared mustard
  • 2 tsp sugar
  • 2 tsp salt
  • ½ tsp pepper
  • 2 tbsp molasses
  • 2 tbsp Wesson oil (or other vegetable oil)
  • ½ lb fresh mushrooms
  • 1 green pepper (larg, cut into chunks)
  • 1 pint cherry tomatoes
  • 1 cup pineapple chunks

Instructions

Step 1: Prepare the Marinade

  • In a bowl, combine tomato juice, vinegar, mustard, sugar, salt, pepper, molasses, and oil. Stir until well blended.

Step 2: Marinate the Meat

  • Place steak cubes in a shallow glass dish. Pour marinade over the meat, ensuring all pieces are coated. Cover with plastic wrap and refrigerate for at least 2 hours.

Step 3: Assemble Skewers

  • Remove steak from marinade. Alternate pieces of steak with mushrooms, green pepper chunks, cherry tomatoes, and pineapple on skewers.

Step 4: Grill the Skewers

  • Place skewers on a grill about 4 inches from hot coals. Cook for 12–15 minutes, turning and basting frequently with the marinade.

Step 5: Serve

  • Remove from grill when meat is browned and vegetables are tender. Serve hot.

Tips

  • Substitute ribeye or top sirloin if sirloin steak is unavailable
  • Add red onion chunks for extra sweetness and color
  • Use metal skewers to avoid soaking wooden ones
  • Reserve a small amount of marinade before adding meat for basting
  • Grill over medium-hot coals for best caramelization
  • Do not overcook—sirloin is best slightly pink inside
  • Pineapple can be swapped for peaches or mango
  • Serve over rice or with a simple green salad
  • Lightly oil grill grates to prevent sticking
