Ingredients
  

  • 1 cup molasses
  • 1 cup sugar
  • ½ cup lard (or substitute unsalted butter)
  • 1 egg (large )
  • 1 cup milk
  • ¼ tsp salt
  • 1 cup raisins
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 2½ to 3 cups flour (enough to make a stiff batter)

Instructions
 

Step 1: Prepare Wet Mixture

  • In a large mixing bowl, cream together the sugar and lard until smooth.
  • Add the molasses and egg; beat until well combined.

Step 2: Add Dry Ingredients

  • In a separate bowl, sift together the flour, baking soda, salt, cinnamon, and cloves.

Step 3: Combine and Add Raisins

  • Alternately add the dry mixture and milk into the wet mixture, stirring until just combined.
  • Fold in the raisins.

Step 4: Bake the Cake

  • Preheat oven to 350°F (175°C).
  • Pour batter into a greased 9x13-inch baking pan.
  • Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

    Tips

    • Bake in a greased 8×8 or 9×9 pan at 350°F / 175°C until a toothpick comes out clean
    • Replace lard with butter or shortening if desired

    • Soak raisins briefly in warm water so they stay plump
    • Add grated orange zest for a citrus note
    • Increase spices if you prefer a stronger molasses flavor
