Krumkaka, meaning “curved cake” in Norwegian, is a delicate Scandinavian cookie made using a patterned iron and quickly rolled into a cone while hot. Traditionally flavored with cardamom and filled with whipped cream or enjoyed plain, these crisp, golden treats are especially popular during Christmas and special occasions. Ingredients
  

  • 3 eggs
  • 1 cup sugar
  • ¼ tsp ground cardamom
  • 1⅓ cups sifted flour
  • ¼ tsp salt
  • 1 cup heavy cream

Step 1: Beat Eggs and Sugar

  • Beat eggs until light. Gradually add sugar, beating until thick and lemon-colored.

Step 2: Combine Dry Ingredients

  • Stir in cardamom. Sift together flour and salt.

Step 3: Mix Batter

  • Blend dry mixture into egg mixture alternately with heavy cream.

Step 4: Prepare Iron and Cook Batter

  • Heat krumkaka iron over medium heat. Place 1 tbsp batter slightly off center on back half of iron.
  • Bring top of iron down gently, press firmly (don’t squeeze out batter), and scrape off excess from edges.

Step 5: Bake and Shape

  • Bake about ½ minute on each side or until lightly browned.
  • Remove from iron and quickly roll on cone-shaped form. Let cool completely.

Tips

  • Work quickly when shaping, cookies harden within seconds after removal from the iron
  • Keep finished cookies in an airtight tin to maintain crispness
  • Add a pinch of cinnamon alongside cardamom for a warmer spice profile
  • Fill cooled cones with whipped cream or custard just before serving
  • Lightly butter the iron only if sticking occurs
  • For uniform cookies, use a level tablespoon of batter each time
  • Let batter rest 10 minutes for slightly smoother texture
  • Dust finished cookies lightly with powdered sugar for presentation
