Ingredients
  

  • 2 cloves garlic (minced)
  • 15 oz cannellini beans (drained and rinsed)
  • 2 tsp lemon juice
  • 1 tsp lemon rind (grated )
  • 1 tbsp fresh rosemary (finely chopped (or 1 tsp dried))
  • salt (to taste)
  • black pepper (to taste)
  • 1 baguette (sliced)

Instructions
 

Step 1: Sauté Garlic

  • In a small pan over medium heat, lightly sauté the minced garlic in olive oil until fragrant, about 1 to 2 minutes.

Step 2: Blend Spread

  • In a food processor, combine cannellini beans, lemon juice, grated lemon rind, sautéed garlic, rosemary, salt, and pepper. Blend until smooth.

Step 3: Toast Bread

  • Lightly toast the baguette slices until golden and crisp, about 3 to 4 minutes in a 400°F oven or under a broiler.

Step 4: Assemble & Serve

  • Spread the white bean mixture onto toasted baguette slices. Garnish with a sprig of rosemary or a drizzle of olive oil if desired. Serve warm or at room temperature.
