Ingredients
  

  • 10 lb boneless chuck roast
  • 6-8 garlic cloves (peeled and sliced)
  • 2 tbsp freshly ground black pepper
  • 1 tsp Accent (MSG)
  • 2 tbsp paprika
  • 1 tbsp salt
  • 1 tbsp prepared mustard

Instructions
 

Step 1: Prepare the Roast

  • Have the butcher roll the chuck roast into a long roll.
  • Insert garlic slices evenly along the inside of the roll.
  • Sprinkle the inside with fresh ground black pepper and Accent before rolling tightly.

Step 2: Season the Exterior

  • Rub the outside of the rolled roast with paprika.
  • Sprinkle evenly with salt and black pepper.
  • Coat with prepared mustard to form a crust.

Step 3: Slow Roast

  • Place roast in a roasting pan, fat side up.
  • Bake in a preheated 150°F oven for 17 hours, uncovered, until extremely tender.
