Ingredients
  

  • 1 flour tortilla
  • ¼ green bell pepper (diced)
  • 2 slices onion (chopped)
  • soy cheese ( or regular cheese, grated, enough to cover tortilla)
  • 1 tsp oregano
  • 1-2 tsp vegetable oil

Instructions
 

Step 1: Prep the Tortilla Base

  • Lay the tortilla flat on a clean counter. Grate soy (or regular) cheese and sprinkle evenly over the tortilla.

Step 2: Prepare the Vegetables

  • Chop green pepper, onion, and any other desired veggies into small pieces (about ¼" x ⅛"). Sprinkle them over the cheese.

Step 3: Optional Seasoning

  • If desired, sprinkle a light pinch of oregano over the top.

Step 4: Heat the Pan

  • Add a small amount of oil to a large frying pan. Heat until the oil spits when tested with a drop of water.

Step 5: Cook the Tortilla Pizza

  • Place the tortilla flat in the pan. Keep the heat high until the oil starts to smoke, then reduce heat to low.

Step 6: Crisp and Melt

  • Turn the heat up again once the smoking stops. Switch heat back and forth to prevent burning. Cook until the tortilla is medium brown on the bottom and the cheese is mostly melted.

Step 7: Serve

  • Use a spatula to carefully remove the tortilla from the pan. Serve immediately.
