Ingredients
  

  • 1 cup graham cracker crumbs
  • ¼ cup butter (melted)
  • 1 can crushed pineapple (1 lb. 4 oz., , drained, reserve syrup)
  • 1 env unflavored gelatin
  • ½ cup pineapple syrup (from can)
  • ¼ cup sugar
  • cup evaporated milk (chilled)
  • 2 tbsp lemon juice

Instructions
 

Step 1: Prepare Crust

  • Mix graham cracker crumbs and melted butter.
  • Press firmly into the bottom of an 8-inch square pan.
  • Chill while preparing filling.

Step 2: Prepare Pineapple Gelatin Base

  • Drain crushed pineapple, saving the syrup.
  • In a saucepan, soften gelatin in ½ cup pineapple syrup.
  • Add sugar.
  • Stir over medium heat until gelatin and sugar dissolve.
  • Remove from heat and let cool.

Step 3: Whip and Incorporate Milk

  • Chill gelatin mixture until slightly thickened.
  • Beat until mixture becomes foamy and light.
  • Gradually add chilled evaporated milk and lemon juice.
  • Continue beating until well blended.

Step 4: Add Pineapple & Assemble

  • Fold in drained pineapple.
  • Pour mixture over chilled graham cracker crust.
  • Chill until firm before serving.
