Ingredients

  • cups sugar
  • ¾ cup milk
  • 2 cups flour
  • 1 tsp baking powder
  • 2 eggs
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • ½ tsp lemon extract (or zest of ½ lemon)
  • ½ cup butter (or lard)

Instructions

Step 1: Preheat Oven

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.

Step 2: Prepare Dry Ingredients

  • In a bowl, whisk together flour, baking powder, and salt.

Step 3: Cream Butter and Sugar

  • In a separate large bowl, cream together butter (or lard) and sugar until light and fluffy.

Step 4: Add Eggs and Flavorings

  • Add eggs one at a time, beating well after each addition. Mix in vanilla and lemon extract.

Step 5: Combine Wet and Dry

  • Alternately add the flour mixture and milk to the creamed mixture, starting and ending with flour. Stir just until combined.

Step 6: Bake

  • Pour batter into the prepared pan. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Step 7: Cool and Serve

  • Let the cake cool in the pan for 10 minutes before transferring to a wire rack. Serve plain or with powdered sugar or glaze.

Tips

  • Add grated lemon zest if choosing the lemon flavoring for a brighter citrus note.
  • Substitute vanilla with almond extract for a more old-fashioned bakery flavor.
  • Fold in ½ cup shredded coconut or finely chopped nuts for texture.
  • Bake as cupcakes (15 to 18 minutes) for portion-controlled servings.
  • Add a simple powdered-sugar glaze flavored with lemon or vanilla.
  • Serve with fresh berries and whipped cream for a light dessert.
  • Replace half the milk with buttermilk for extra tenderness.
  • Mix in a pinch of nutmeg or cinnamon for a warm spice variation.
  • Frost with a classic buttercream or a cooked ermine frosting for a vintage finish.
