Ingredients
  

  • cups butter (3 sticks )
  • 1 cup powdered sugar

  • 2 tsp vanilla extract
  • ¼ tsp salt
  • 2⅔ cups all-purpose flour (sifted)
  • 2 cups pecans (finely chopped )
  • 2-3 egg whites (large, for coating)
  • ½ tsp raspberry jam (or other jam per cookie)

Instructions
 

Step 1: Cream Base

  • Cream together butter and powdered sugar until light and fluffy.

Step 2: Add Egg Yolks & Vanilla

  • Separate the eggs. Beat in the egg yolks and vanilla to the butter mixture.

Step 3: Mix Dry Ingredients

  • Add salt and gradually mix in sifted flour until dough forms.

Step 4: Shape Cookies

  • Shape dough into small balls, about 1 inch in diameter.

Step 5: Coat in Nuts

  • Lightly beat the egg whites. Dip each dough ball into egg white, then roll in finely chopped pecans.

Step 6: Make Thumbprints

  • Place cookies on parchment-lined baking sheet. Press the center with your thumb to make an indentation.

Step 7: Add Jam

  • Fill each indentation with approximately ½ tsp jam.

Step 8: Bake

  • Bake at 350°F for 8–10 minutes or until lightly golden. Cool on rack.
