Hamburger Minestrone
Hamburger Minestrone is a hearty, vegetable-rich soup that blends the savory depth of browned ground beef with an array of classic minestrone ingredients—zucchini, cabbage, kidney beans, macaroni, and more. This version is distinctly American in its use of beef bouillon and cheddar cheese soup (as seen in the add-on variation), creating a comfort food twist on an Italian staple. It's ideal for chilly evenings, big family dinners, or meal prepping for the week.

  • ½ tsp Italian seasoning
  • 2 tsp beef bouillon

Instructions

  • Add extra zucchini or celery for more vegetables
  • Use beef broth instead of water for deeper flavor
  • Add cooked macaroni near the end to prevent overcooking
  • Freeze leftovers in individual portions for easy meals
  • Sprinkle with grated cheese when serving
  • Serve with crusty bread or crackers
  • Adjust Italian seasoning to taste
  • Add cabbage last if you prefer more texture
