  • 1 cup butter ( or lard)
  • 2 cups brown sugar
  • 3 eggs
  • 3 cups flour
  • 1 cup coffee (cold )
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup raisins (heated)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp vanilla extract

Instructions
 

Step 1: Preheat and Prep

  • Preheat your oven to 350°F (175°C).
  • Lightly grease or line a baking pan with parchment paper.

Step 2: Add Ingredients Together

  • In a large bowl, add all ingredients listed: butter/lard, brown sugar, eggs, flour, cold coffee, cinnamon, nutmeg, raisins, baking powder, baking soda, and vanilla.
  • Do not stir until everything is in the bowl.

Step 3: Mix and Bake

  • Once all ingredients are in the bowl, mix thoroughly until fully combined.
  • Pour the thick batter into the prepared pan, smoothing the top. The batter should be about an inch or more thick.
  • Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.

Step 4: Cool, Frost & Cut

  • Let cool completely.
  • Frost as desired.
  • Cut into squares before serving.
