Lightly grease or line a baking pan with parchment paper.
Step 2: Add Ingredients Together
In a large bowl, add all ingredients listed: butter/lard, brown sugar, eggs, flour, cold coffee, cinnamon, nutmeg, raisins, baking powder, baking soda, and vanilla.
Do not stir until everything is in the bowl.
