  • 8 oz sausage
  • 4 eggs (hardboiled)
  • 1 cup Swiss cheese (shredded )
  • 1 cup Cheddar cheese
  • 3 eggs (beaten)
  • 1 ¼ cup light cream (undiluted, or evaporated milk)
  • ¾ tsp salt
  • tsp pepper
  • 1 pinch paprika

Instructions
 

Step 1: Prepare the Pie Shell

  • Preheat oven to 350°F (175°C).
  • Do not prick the pie shell. Pre-bake for 7 minutes and set aside.

Step 2: Cook the Sausage

  • In a skillet, cook sausage over medium heat until browned and crumbly.
  • Drain well on paper towels.

Step 3: Assemble the Filling

  • Sprinkle chopped eggs evenly over the bottom of the pie shell.
  • Top with cooked sausage and shredded cheeses.

Step 4: Prepare Egg Mixture

  • In a bowl, whisk together beaten eggs, light cream (or evaporated milk), salt, pepper, and paprika until smooth.

Step 5: Combine and Bake

  • Pour egg mixture evenly over the sausage and cheese layers.
  • Sprinkle with a dash of paprika.

Step 6: Bake

  • Bake at 350°F for 30–35 minutes, or until a knife inserted in the center comes out clean.
  • Let stand for 10 minutes before serving.
